Post-lunch sleepiness can stem from a dip in your core body temperature that naturally happens between 2:00pm and 4:00pm. It's a dip that triggers the release of a snooze-inducing hormone called melatonin. It's a normal part of your body's circadian rhythm.
Need a pick me up to get through the 3pm slump? 😴
It’s chocolate week on #GBBO@britishbakeoff this week and I made this delicious #vegan millionaire slices to help me get through the day and give me the energy boost I need at mid-afternoon with my thermo mix or kitchen appliance that is 22 appliances in one.
Super easy and fast recipe I have adapted to the #Thermomix. Thanks @suspor for the inspiration. Great to have so many Thermo mix lovers in Cork but also other parts of Ireland like Waterford, Kerry, Galway, Kilkenny. A really nice community that inspire each other to cook healthier meals every day.
Vegan Millionaire Slice
Ingredients
Base
100 g oatmeal
1 tsp cacao powder
2 tbsp coconut oil
2 tbsp maple syrup
1/2 pure vanilla extract
Caramel
125 g dates soaked in boiling water for 15 mins
65 g cashews soaked in boiling water for 15 mins
1/2 tsp pure vanilla extract
Top Layer
1 tbsp virgin coconut oil
1 tbsp cacao powder
2 tsp pure maple syrup
Method
Line a small container (approx 10x15 cm) with baking paper.
Mix all ingredients for the base together on your Thermomix for 30 sec / speed 9 or until well blended. Evenly press it into the base of the container. Put in the fridge while making the next step.
Drain and rinse the cashews and dates and process with the vanilla at speed 10 for 1 min. Check the Thermomix in the process as you will need to stop and push down the mixture towards the blades.
Spread caramel mixture on top of the base and place in the refrigerator 30 mins until set.
Melt coconut oil from the top layer with the rest of the ingredients in your Thermomix mixing bowl for 3 mins / temperature 37 degrees and spoon speed. Once melted, pour over the top of the caramel and refrigerate again until set. If possible overnight so it will be nice and hard in the morning.
Lift out the container using baking paper and slice into squares. Store in the refrigerator.
